Vegan Japanese/Okinawan Feast

 

As you may have guessed from all my food posts I'm not vegan, but I love my veggies and like to eat meat-free on some days. I also enjoy the challenge of cooking an all-vegetable meal and yesterday had the chance to prepare a dinner party for vegan and vegetarian friends. I made mostly Japanese and Okinawan inspired dishes, except for one appetizer (the guoi con fresh spring rolls).

The menu:

Edamame and wasabi guacamole with taro root chips
Goi cuon (Vietnamese salad rolls) with peanut dipping sauce
White miso soup with spinach
Fried beni-imo (Okinawan purple sweet potatoes)
Stewed kabocha
Goya and tofu champuru (stir-fry)
Eggplant sauteed in miso, ginger, garlic and sesame oil
Kale, wakame and ginger salad
Simmered Okinawan konbu, daikon, lotus root, shiitake, carrot
Rice

  1. Thank Goodness I just came back from a visit with California Daughter and ate my way through a lot of great Asian food because this post with wonderful photos would have driven me crazy !
